過酒的方式，是將葡萄酒倒入醒酒瓶(Decenter)的動作稱為過酒，但過酒的目的到底何在?
其實有二，一是藉此將陳置多年的沉淀物去除。雖然喝下這些沉淀物并無任何大礙，但有損葡萄酒的風味，所以必須去除。
另一則是使年份較少的葡萄酒將其原始的風味，從沉睡中蘇醒過來。因為葡萄酒會因過酒的動作而有機會與空氣接觸，此時沉睡中的葡萄酒將立刻芳香四溢，味道也變的圓潤了。
