in Chinese supermarkets, and you need to take out the inside.

But I'm cooking this because my mum used to make it often.

I used to walk into the door and I would hear the wok sizzle

and so by the time I washed my hands and everything, the food would be on the table.

We take vegetables and we blanch them,

and it helps to give them a cleaner flavour.

Now I'm draining it.
接著瀝干
Garlic, ginger and the black beans.
大蒜，姜還有黑豆
Then add spring onions, mild red chillies...and rice wine.
接著再放入蔥，紅辣椒，還有米酒
Next, add the bitter melon pieces and a splash of water to tenderise them.
接下來，倒入苦瓜，加一點兒水讓它們更嫩
They need a bit more cooking.
還要再炒會兒
Just a little bit of sesame oil.
放進一點點芝麻油
Give it a nice sheen to that.
