紅茶
Black tea is a type of tea that is more oxidized than oolong, green and white teas. All four types are made from leaves of the shrub (or small tree) Camellia sinensis. Black tea is generally stronger in flavor than the less oxidized teas.
紅茶是經過采摘、萎凋、揉捻、發酵、干燥等步驟生產出來的;比綠茶多了一個發酵的過程。發酵是指茶葉在空氣中氧化,發酵作用使得茶葉中的茶多酚和單寧酸減少,產生了茶黃素、茶紅素等新的成分和醇類、醛類、酮類、酯類等芳香物質。因此,紅茶的茶葉呈黑色,或黑色中參雜著嫩芽的橙黃色;茶湯的呈深紅色;香氣撲鼻;由于少了苦澀味,因而味道更香甜、醇厚。
