In this presentation we will outline basic information
about the vitamins that are carried in foods with fat,
the so-called fat soluble vitamins.
There are four vitamins in this category:
vitamin D, vitamin E, vitamin K and vitamin A.
An easy way to remember them is
by using the acronym DEKA
Many of you may be asking:
what are fat soluble vitamins?
Fat soluble vitamins include
the vitamins A, K, E and D.
維生素A K E D
And the reason they are called fat soluble is
because they are associated with fats,
that are carried with fats when absorbed into the body.
In certain diseases such as Crones disease
or cystic fibrosis dietary fat is not well absorbed
which can cause the malabsorption of these vitamins.
Fat soluble vitamins are only needed
in small amounts to sustain good health.
Because our bodies store excess fat soluble vitamins
in the liver and in fat cells we don't need
to consume them everyday to avoid deficiencies.
However because they are retained in the body
there are high risks of toxicity
if too much of a fat soluble vitamin is ingested.
For this reason an upper tolerable limit
has been defined for each fat soluble vitamin.
The upper tolerable limit is the amount
which is considered to be safe
and to be without any adverse side effects.
From these pictures can you guess
what some important functions of vitamin A are?
Vitamin A is important for eye function, skin health,
and may have a role in cancer prevention.
Vitamin A has many roles in the body.
Vision was the first role identified for vitamin A.
Vitamin A deficiency remains
the most common cause of blindness in the world today.
In the form of retinol it produces the pigments
in the retina of the eye that respond to light.
Early signs of vitamin A deficiency include
night blindness because of the lack of adequate retinol.
When treated night blindness is reversible
however if the vitamin A deficiency is not corrected
permanent loss of vision can occur.
Vitamin A also has other roles in the body
including promoting teeth and bone development
and as a regulator of cell division and differentiation.
